Made classic pesto today – the basil is taking over the garden.
Took me most of the morning to wash and strip two of the biggest bushes…
The basic recipe (adapt as needed) is –

2 cups of fresh basil, packed
3 tbspn pine nuts
3 tbspn parmesan
2 large cloves garlic, crushed
1/4 cup extra-virgin olive oil

You can use other nuts or herbs – experiment! Just don’t do what I did and think I could whip it up in a blender – the blades won’t handle it. The mincer attachment on the juicer didn’t work too well either… Perhaps a food processor would be better?
The finished result. It doesn’t look as green as it should – possibly too much handling. Tastes good, though!

14 Years and Bionicle Cakes

As per special request ๐Ÿ˜€ here’s the cake my oldest boy requested for his 14th birthday…

It’s a bionicle being pulled in to a circuit board. Yeah, I know you probably didn’t get that…
It’s an ice cream cake, the easiest of all cakes – just upend a tub of ice cream and decorate! Seemed to go down well.. ๐Ÿ˜€
We had six teenage boys sleeping over and playing x-box on Saturday night. It all went well (if a little loud..) Biggest boy got himself a new (used) mini laptop, too, with money he’d saved and our top-up gift – he’s pleased.. Time to settle down again, until littlest bean turns 10 in September!

Reading Valentines

We went to the library today, as we usually do on Thursdays… they were doing a special Valentines Day deal – we could take our chances with a wrapped book, as well as our other choices. They had adult non-fiction and children’s fiction left.. we got two of each.. it was very exciting!

Family

We’ve just had a lovely weekend (plus two days ๐Ÿ˜€ ) catching up with our nephew, who’s over here from the U.K. He’s been travelling round Australia for a while so was able to drop in on us… it’s been great catching up (as well as getting a little homesick! )

We reminisced, talked about family… generally just spent time together..
There comes a time, when you’ve been travelling, when you just want something familiar, and a bit of home comfort… hopefully we’ve been able to provide that..

Sherwood Cliffs

We’re back after a busy weekend checking out a Christian Community in New South Wales… we went to have a look at how things are run, and get an idea of issues that might need to be looked at when weย eventually set up our community… it was very interesting, and we met a lot of lovely people..
We turned up on a weekend where the local Timber Festival was happening, so it wasn’t the average schedule… I found out how to make fence posts, though.. There was a barbeque on the Saturday night, where anyone and everyone can drop in, and church (in Coffs Harbour – an hour away) and picnic on the beach on the Sunday. It’s interesting to see the balance between community togetherness and the need for quiet, personal time..

Our original plan was to go for the weekend, with the view to go back this weekend for about four weeks… that’s not ย going to work out at the moment, but we’re looking at Christmas/New Year.

This wasย the view from our doorway.. each dwelling is different – the place has a bit of a “cobbled together” look ๐Ÿ˜€

The dining/food prep etc area… those are railway carriages connected together, roofed and with the middle section built in, with tables etc..

The dinner bell, which can be heard wherever you are in the community.. the chair is so that the children can ring it (Littlest Bean had a go!)

The fire pit, where everyone gathers for theย Saturday evening barbeque..

It was a good weekend.

Arachnophobes – LOOK AWAY!

Found this when we were dismantling the trampoline… it was hiding in one of the upright poles (the ones the net goes around) It was not happy to be disturbed…. hubby gave it a new home over by the trees…. and yes – it was as big as it looks!
I could probably have put my hand somewhere in its vicinity to show comparative size…. but…um… no. That just wasn’t going to happen… I’m not too good at estimating size, but I would say it was somewhere round 5-7cm. I’m glad it didn’t decide to investigate while I was pulling down the netting…
